Peggy's Pizza: Part 40 of 2023

We have been experiencing beautiful fall weather. This week has been peak fall colors. But, a Facebook memory reminded me of how unpredictable October weather can be in Iowa. 

I am grateful for the nice weather as I am still in a boot from surgery on September 12. I am hoping to be out of it by Thanksgiving.

The warm weather is still bringing on the tomatoes. So I was able to do another batch of pizza sauce with tomatoes, basil, oregano and parsley from the garden. 

Another 12 half pints of sauce for the freezer!

Matthew had Special Olympics District Bowling on Wednesday, but he won’t find out if he’s going to State until Monday night at the awards ceremony.

Between Matthew’s work schedule and his activities, we haven’t had much time in the kitchen. But, there is always time for pizza…

Sunday’s Creation (on Monday): Marinara & Provolone Pizza… a thick pan crust layered with provolone cheese slices, marinara (freshly made…straight out of the crockpot) and freshly grated Parmigiano Reggiano then garnished with a sprinkle of fresh oregano, fresh ground black pepper and a drizzle of garlic olive oil.

(Did you know the name of Marinara goes back to Italian sailors. Due to the shelf life of tomato sauce, garlic and oregano; it could be freshly prepared on the high seas and used as provisions for long voyages.)

Since we were leaving on Friday, we did pizza a day early…

Friday Pieday (on Thursday): Pizza Salsiccia e Friarielli is a very traditional Italian flavor combination…a thin crispy crust topped with garlic olive oil, grated Parmesan, smoked provolone, broccoli, grilled Sweet Italian sausage links, Pecorino-Romano and a sprinkle of red chili flakes. 

We spent the weekend in Kearney, Nebraska. My brother and his family live in Boulder, Colorado and Kearney is about half-way. We had not seen each other since pre-CoVid. My nephew and his fiance were supposed to come, but Zach was exposed to CoVid on Wednesday by his boss. So, they thought it best not to take a chance. 

My brother called on Thursday while we were making pizza. He jokingly ‘whined’ he wanted a pizza. So, Matthew made the dough Thursday evening and we got up early on Friday to make a pizza to be delivered 6 hours later…

Bill’s Pizza: A thin crispy crust topped with a layer of parmesan, mozzarella, traditional pepperoni, Italian sausage, more mozzarella and then cup n crisp pepperoni.

We had a good weekend enjoying Bill’s music on the patio at the hotel and celebrating my 67th birthday. 

Family time is good time!
