Peggy's Pizza: Part 41 of 2023

We had our first freeze on Friday, so I guess this officially ushers in chili season. Although, we can eat chili any time of year.

I know the definition of chili can be controversial…red chili, white chili, green chili, beans, no beans, etc. The definition according to one website
“The dish we know as chili calls on red chile peppers (like ancho peppers, guajillo peppers, and spicier cayenne peppers) for its signature heat and reddish color.”

No matter what the other ingredients are, I think we can agree you need to be using gound peppers or diced. And did you know there is a scale that rates the level of heat that peppers have…the Scoville Scale

Recently a new variety of pepper was crowned the hottest in the world…Pepper X.

I don’t know about you, but I’m wondering why!?!

Matthew loves making chili and has created his own recipe. He has won more than 12 chili competitions. And as much as we love his recipe, we decided to start trying some new recipes. So, we are introducing…

Chili Wednesday: Beef & Bean Taco Chili…with ground beef, pinto beans & black beans and taco seasoning then garnished with crushed tortilla chips, cheese, sour cream and green onions.

We were busy this week, but did find some time to be in the kitchen…

Sunday’s Creation (on Monday): Matthew took over the kitchen to create an idea he found as a belated birthday pizza for me! Cheesy Hot Dog & Baked Beans Pizza with Crispy Tots… thin and crispy crust topped with mozzarella & cheddar, baked beans, hot dogs, tater tots and more mozzarella & cheddar.
 

On Wednesday, October 18, Matthew competed in Special Olympics District Bowling. Monday evening was a pizza party and an awards ceremony. He took home a fourth-place medal. Good job!

Taco Tuesday: Matthew & Roy fixed an edible tortilla bowl filled with lettuce, fresh garden tomatoes, green onions, taco meat, taco sauce, red kidney beans and corn then garnished with cheese, sour cream and guacamole. Good job guys!
 

On Thursday, Matthew attended Link’s Beyond the Grave Rave Halloween Dance. He decided to again go as ‘The Pizza Dude’…

Another Italian style pizza…

Friday PiedaySicilian Pizzolo…a unique sandwich like pizza. A thin crispy crust topped with sauce, fresh mozzarella, caciocavallo, pancetta, prosciutto, mushrooms, arugula, more fresh mozzarella & caciocavallo then topped with another layer of dough lightly brushed with olive oil
and topped with grated Parmigiana-Reggiano, chopped Italian green olives and oregano.

On Saturday, Matthew went with Link Club Travel to Ashland, Nebraska. They saw all kinds of wild animals, including bears & bison…

Sunday’s Creation: A freeze Friday night inspired this Green Tomato, Bacon & Cheddar Pizza…a thin crispy crust brushed with garlic olive oil then topped with sharp cheddar cheese, grilled green tomatoes, grilled scallions, crispy bacon and more cheddar. A big thank you to Roy
for growing the tomatoes and to Matthew for grilling the tomatoes & onions and making the dough.
