Peggy's Pizza: Part 38 of 2023

Did you know that "each fall, North American monarchs travel from their summer breeding grounds to overwintering locations? East of the Rocky Mountains, monarchs travel up to an astonishing 3,000 miles to central Mexico, whereas the shorter migration west of the Rockies is to the California coast." Iowa happens to be in the migration path and a few of the monarchs have stopped by to enjoy our aster flowers. You can learn more about that here

With a possibility of frost this weekend, we are enjoying the last of the tomatoes from the garden…

Monday in the Kitchen: One last BLT…look at that juicy tomato. 

For lunch on Tuesday we  celebrated National Taco Day…Chipotle BBQ Pulled Pork Tacos topped with Cilantro Lime Coleslaw. (I just happened to have leftover pulled pork in the freezer and I modified my Mom’s coleslaw recipe by adding lime zest, lime juice and cilantro.)

For dinner we celebrated National Cinnamon Roll Day…we followed a Midwest school tradition by pairing homemade cinnamon rolls with chili! (Matthew’s Famous Chili, of course!)

Some people eat the cinnamon roll on the side, others dip the roll in the chili. We tried dipping it and it was quite delicious. The roll tamed the heat of the chili and the chili cut the sweetness of the roll. 

On Thursday, since Basketball season will soon be here…the Simpson Storm men’s and women’s basketball teams hosted a basketball clinic for Special Olympics athletes to practice rebounding, shooting, & passing drills!

Friday Pieday: Prosciutto e funghi pizza…a thin crispy crust topped with a red sauce, parmesan, mozzarella, mushrooms, prosciutto and more mozzarella than drizzled with garlic olive oil. 

On Saturday: Over the open fire with Matthew: Pizza Chicken Foil Packs…boneless chicken breasts topped with pepperoni, red sauce, peppers & onions, mushrooms, Kalamata olives and mozzarella garnished with fresh grated parmesan and fresh basil. 

Sunday’s Creation: Sun-dried Tomato Pesto & Roasted Garlic Pizza …a focaccia style crust topped with sun-dried tomato pesto, Parmesan, sliced tomatoes, cherry tomatoes, salt & pepper, roasted garlic and bocconcini then garnished with a drizzle of olive oil and a chiffonade of fresh basil.
