I’m not sure what happened to my time this week. But, between going to the garden stores, Special Olympics and genealogy research the time has flown by.
On Thursday Matthew competed in the Special Olympics of Iowa Summer Games… It was a beautiful day and Link Strikers brought home the gold in Bocce!

And here are Matthew's signature bocce moves, he juggles the ball before he rolls, and he kicks out after he rolls.
Saturday morning we created a new flower bed. A tree was taken down a couple of years ago and all that was left was a stump and a few daffodils. So, with some leftover landscaping bricks a neighbor gave us we created a new bed. Here is the before and after.

Matthew then did some grilling for lunch…
Saturday on the Grill with Matthew: BBQ’d chicken, Parmesan roasted potatoes and veggies.

On Friday’s I am continuing to make styles and variations of pizza from Italy…
A Red, White & Blue pizza on the Memorial Day holiday weekend! A classic Roman Pizza con Patate (pizza with potatoes). A Neopolitan crust topped with a garlicky tomato sauce, fresh oregano from the garden, Parmesan, Asiago cheese, blue potatoes, salt & fresh ground pepper and fresh mozzarella.

Sunday’s Creation: Who remembers the McDonald’s jingle from 1974…Two all beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame seed bun? How ‘bout those classic flavors on a crust?…A Big Mac Pizza!

(If you could recite the jingle in under 4 seconds you got a free Big Mac. I ate several free Big Mac’s in college! And, I can still say it today, lol!)
