Peggy's Pizza: Part 13 of 2023

By the time you read this we will be finally on our trip to Europe. On Roy’s retirement bucket list was a Viking River Cruise to China in March of 2020, which was canceled. We rebooked on the Grand European River Cruise and it was canceled three times due to CoVid. We are finally on our 22-day adventure.

We spent the last week finishing up packing, cleaning the house (Because after being gone for three weeks, I wanted a clean house to come home to!) and of course cooking. We planned our meals to use up what was in the fridge.

So, here we go…

Tuesday in the Kitchen with Matthew & Dad: I wasn’t feeling well this morning after a hypoglycemic episode in the middle of the night. So, these dudes brought me breakfast in bed…Ham & Egg Cups and toast. Thanks guys, they were delicious!

Wednesday in the Kitchen with Matthew: What to do with leftover buttermilk & a partial bottle of Guinness?…Guinness flapjacks topped with Kerrygold Pure Irish Butter, maple syrup, blueberries, whip cream and a side of bacon.

And of course, one last pizza before vacation…

Thursday (Friday) Pieday: Pizza al Padellino, (padellino means 'small frying pan or skillet’) is an Italian-style deep dish pizza. It hails from Turin, Italy’s first capital, and was a favorite of Italy’s first king: Vittorio Emanuele II. It has a thick soft crust that we topped with a red sauce, pecorino-Romano, sopressata, black olives, white onion, fresh mozzarella and a chiffonade of fresh basil.
