I am wondering if anyone else is a list maker? And, if you are, is it on paper? If on paper, is it in a planner or will any old scrap of paper do? Is it written in pen or pencil? If not on paper, then is it on a laptop, tablet or phone? Do you put a check mark by a completed task? Or, do you run a line through it?
I am a list maker! And my method has changed throughout the years. In the days before computers (yes I’m old, lol), I had a calendar that listed the day hour by hour. In addition to that, I would often have Post-It notes with other lists of things to do. I always had a grocery list on the side of the fridge. Anyone in the family could add to that list.
Nowadays my lists are on my iPhone. I love the Notes and of course I can put a ✔️ by anything completed. And I can delete when the list is no longer needed. Since the beginning of CoVid, my grocery lists have been on the grocery store apps, as I love curb side pickup.
So, what prompted me to write about lists this week is that we will be going on a 22-day vacation March 25th. I have several lists right now to make sure I get everything done before we leave. I will keep you posted!

Monday in the Kitchen with Matthew: I have a confession…we like Stove Top Cornbread Stuffing! (It tastes close to my Mom’s homemade cornbread dressing, which unfortunately I never learned to make.) So, we decided to try a recipe off of the box…Stove Top Stuffing Meatloaf served with roasted potatoes & carrots.

Tuesday in the Kitchen with Matthew: Texas Toast Sloppy Joes… open-faced Sloppy Joes on garlic Texas toast, topped with mozzarella and served with salad.

I mentioned last week that Matthew’s microwave died. There are still some supply chain issues, so when they found what we wanted it took a few days to get it. Then to save almost $200, the guys planned to install it. They picked it up on Saturday and didn’t finish the installation until Wednesday. Given all the frustration, it might have been worth the installation fee! In the meantime, Matthew learned that it is possible to live without one. I told him we didn’t have one till I was pregnant with him. And he’s going to be 40 in June.
Cooking was easy on Wednesday, as we put everything in the crockpot on Tuesday. When we do that, we have to give credit to Roy, as he turns it on first thing in the morning.
Wednesday in the Kitchen with Matthew: What’s better on a windy, rainy, icy, snowy day than…Crockpot Italian Sausage & Lentil Soup garnished with shaved Parmesan cheese& parsley and a crusty baguette.

Again, we love to put dinner together in the crockpot the night before…
Thursday in the Kitchen with Matthew: Potato Sausage Casserole with double layers of sliced potatoes, green beans, mushrooms, onions, cream of mushroom soup and breakfast sausage then topped with cheddar cheese.

Continuing the Italian pizza journey…
Friday Pieday: Pinsa Romana is an ancient, healthier and more digestible version of a classic Neapolitan pizza. It is a thicker, fluffy crust made with part rice flour then topped with sautéed Baby Bella mushrooms & parsley, smoked provolone and garnished with fresh parsley.

Sunday’s Creation: Ham & Swiss Pizza (inspired by a Croque Monsieur sandwich)…a pan crust stretched thin with a Honey Dijon mustard sauce, Parmesan, Swiss cheese, ham, mozzarella and garnished with green onions.
