Pandemic Pizza: Part 47 of 2022

Merry Christmas! And, Happy Holidays as well! Did you know there are 20 celebrations this holiday season besides Christmas?

We happen to celebrate Christmas in a very quiet way. We love to decorate and enjoy the foods of the season. But, we no longer go all out exchanging gifts. We would rather just spend time with each other such as enjoying our season tickets to the Des Moines Performing Arts Broadway Series.

And, of course, Matthew and I love to spend time together in the kitchen. (We need to give credit to my hubby for cleanup duty!)

We started this week with brunch…

Monday in the Kitchen with Matthew: Overnight Egg Nog French Toast with blueberries & raspberries and oven baked bacon.

Tuesday in the Kitchen with Matthew: Since we had some leftover ingredients from making lasagna, we decided to make Lasagna Soup garnished with ricotta & pecorino-romano cheese and fresh basil.

With the weather forecast to take a turn for the worst, we made lunch early and then sent Matthew home to hunker down for a couple of days.

Wednesday in the Kitchen with Matthew: Homemade Bean with Bacon soup and Blueberry Cornbread muffins.

Thursday indeed was a nasty day…

The weather did improve enough for Matthew to come for pizza on…

Friday Pieday: Rhode Island Pizza Strips, aka Bakery Pizzaa rectangular pan of thin baked dough, it is covered with a thick tomato sauce, almost a paste. It is then cut into strips and eaten at room temperature.

Some may say this is not real pizza, but it was delicious.

With Christmas being on Sunday we made a pizza Creation on Saturday.

Sunday’s Creation (a day early): Pizza Candy Canes…our pan crust filled with homemade sauce, pepperoni, Italian sausage, (leftover) meatballs and mozzarella then garnished with fresh basil.

We then had what has become our traditional Christmas Eve dinner of Matthew’s Famous Award Winning Chili!

Christmas Day we spent watching movies and for dinner we had ham, corn pudding and a new roasted vegetable combo of brussel sprouts, apple, red onion and carrots. It was delicious. Unfortunately, I forgot to take a pic. I hope you had a good Christmas and I will see you next year!
