It may be fall, but we are already dreaming of spring!
It was Tulip time when we visited Keukenhof Gardens in the Netherlands in April. I might have gotten carried away when purchasing bulbs (300) in the gift shop. They finally arrived on Thursday. We donated 100 bulbs to our church garden. And, because I brought so many, they threw in an extra 50 for free. Well, six of the bulbs were Amaryllis. Since they need to be planted indoors, we only kept one and we gave away five.
My hubby planted the amaryllis bulb this week and is in charge of taking care of it. If all goes well it will bloom by Christmas.
The rest of the bulbs will be planted this next week.
Tuesday was Halloween! Also, a Bonus Pizza Day: For lunch we made a Candy Corn Pizza (savory)…a thin crispy crust topped with a garlic white sauce, mozzarella, mild cheddar and sharp cheddar.
Dinnertime was Variations of Taco Tuesday: What to do with leftover Beef & Bean Taco Chili from last week…Taco Salads of course…tortilla chips topped with shredded lettuce, chili, cheese, guacamole, sour cream and green onions.
On Wednesday Matthew made pasta at home and delivered some to us for lunch…yummy!
Another style & variation of pizza in Italy… Friday Pieday: Taleggio Fungi Pizza…a thin crispy crust topped with garlic olive oil, tangy Taleggio cheese, mozzarella, sautéed garlic & cremini mushrooms with fresh thyme, rosemary, parsley & sage then far with fresh parsley and drizzled with truffle oil.
On Saturday, Matthew was in Nebraska again for the day…
Sunday’s Creation: Prosciutto Apple Brie Pizza…a thin crispy crust topped with a Balsamic Roasted Garlic Aioli, Parmesan, Brie, prosciutto wrapped Honeycrisp apples and mozzarella.
Till next week, ~Peggy Palmer-Johnson
