Fall is our favorite time of year, so we decided to take a little getaway to Minnesota this past week. We spent four days in Duluth, which is right on Lake Superior.
Our hotel was right on the water near the Liftbridge.
We visited The Train Museum and took a short trip in a vintage domed rail car.
We learned about the history of ore mining and shipping at the Maritime Museum.
We learned even more about shipping while on the Vista Star for a tour of the shoreline of Lake Superior and the Port of Duluth.
We then visited the Great Lakes Aquarium where we learned about the ecosystem of the lake and the nearby forests.
When we returned home on Wednesday we didn’t have time to make pizza for National Pepperoni Day. So…
Friday Pieday: Pizza a portafoglio (literally “wallet” pizza) is an Italian street food…folded in fourths and wrapped in paper. A thin Neapolitan crust topped with red sauce, fresh oregano, salami and mozzarella.
Soup on Saturday: Happy Fall…our favorite time of year! We have been inspired by an article, ‘36 Best Hearty Fall Soups to Warm Your Body and Soul’. Our plan is to try each recipe. First up is…White Wine Coq Au Vin with garlic bread. (Here is the link if you want to check it out!)
Sunday’s Creation: A Cheesy Meatball Pizza…a thin, crispy crust topped with red sauce, grated Parmesan, shredded Parmesan, cheddar, mini-meatballs, mozzarella then garnished with parsley from the garden and a drizzle of garlic olive oil.
We finished up Crockpot Apple Butter on Sunday afternoon…yielded 11 half-pints to freeze. And 1-quarter pint for Keith & Linda Sheriff who gave us the apples from their tree. Thank you to Matthew for grinding up the whole cloves as I was out of ground cloves.
