Peggy's Pizza: Part 34 of 2023

This past Monday was Labor Day in the U.S. Officially, Labor Day is a celebration of the hard-won achievements of America's labor movement and a recognition of what workers have contributed to the nation's prosperity.

Unofficially, it has become a time for BBQ’s, camping and boating as it marks the end of the cultural summer season. 

Since it was Labor Day, I chose to make a visit to Matthew’s condo. (I haven’t been there in over a year, so I knew it might involve some labor, lol.) He has been living independently now for two years. He has Supported Community Living staff a few hours a week and Dad does occasional visits. Between the two, he is supposed to be able to keep his place neat and clean. 

He does a pretty good job of keeping it clean, with some supervision. But, the clutter can get out of control, as he is a collector! I gave him four-days notice before the planned ‘Mom Check’. 

Between Matthew working and ‘working’ on the condo, we didn’t have time to cook this week. So, we did some ‘market research’ on Casey’s new thin crust pizza. 

Not to brag, but our homemade pizza is Sooo….. much better! And cheaper…$18.18! Seriously!

We did have time to make pizza!

Friday Pieday: Pizza ricotta e spinaci…a thin crispy crust brushed with herbed olive oil then topped with ricotta mixed with garlic & Italian seasoning, parmesan, mozzarella, spinach, red onion, fresh cracked salt & red pepper flakes and Romano cheese.

On Saturday, Matthew and Link Therapeutic Recreation Programs friends had a fun day in Minnesota…

Sunday’s Creation: Prosciutto & Green Tomato Jam Pizza…thin crust topped with herbed olive oil, Brie, parmesan, prosciutto, roasted artichokes, mozzarella and green tomato jam.
