Peggy's Pizza: Part 25 of 2023

For those of you in the U.S. I hope you had a Happy 4th of July! 

Matthew celebrated on the 3rd by attending the Yankee Doodle Pops Concert & Fireworks at the Iowa State Capitol in Des Moines. 

It has always been one of my favorite things to do. But, with recovering from knee surgery, watching it live on Iowa PBS was the next best thing. 

On the 4th, Roy put a brisket in the smoker and Matthew put pineapple baked beans in the crockpot and made red white & blue slaw. It was a perfect holiday dinner!

On Thursday night, Matthew enjoyed an evening of music at Jasper Winery.

My week was spent going to physical therapy and exercising my knee every day. I did try walking some with only one crutch. I am pleased with my progress. 

On Saturday and Sunday, I ventured into the kitchen to make some pizza. The rest of the cooking is still up to the guys.

Saturday (Friday) Pieday: Pizza Mimosa is a variety of Italian pizza bianca or white pizza on a pan crust topped with sour cream, parmesan, mozzarella, prosciutto, corn and more mozzarella cheese then garnished with fresh basil leaves and a drizzle of olive oil.

Sunday’s Creation: Copycat Casey’s new BBQ Brisket Pizza…pan crust topped with BBQ sauce, Parmesan, cheddar, smoked chopped brisket, jalapenos, red onions, mozzarella and garnished with a drizzle of ranch dressing. (Thanks to Roy for smoking the brisket this week.)
