Peggy's Pizza: Part 23 of 2023

This was a busy week for Matthew as he is settling into his new job. He is working at a brand new grocery store, Fareway, only a few blocks from his condo. It is a regional grocery store chain that has a good reputation as a place for individuals with disabilities to work. 

Matthew previously worked at a local grocery store for 16 years until they went out of business. His new manager was excited to hire him with all that experience. He has been stocking, checking in vendor deliveries and occasionally sacking. 

Matthew also had a couple of Link activities this week. Monday was the third in a series of exploring hiking trails in the area.

On Thursday, he and the Link Spinners Club went to an Iowa Cubs game, the AAA team for the Chicago Cubs. They were able to enjoy the game and food in the comfort of a skybox. 

As for me, I am still moving slow. I am doing my PT exercises every day. On Friday I had my first venture down the stairs and out of the house to the Physical Therapist’s clinic. 

In the kitchen…

On Wednesday, I discovered that Roy has been holding out on me for 42 years…he CAN cook! He made Overnight Pulled Pork in the crockpot and served cole slaw and potato salad.

On Thursday it was teamwork…In the Kitchen with Roy & Matthew: Delicious Tacos…Thanks guys!

Matthew is still in charge of pizza. So on Friday he continued the series of Styles and Variations from Italy…

Matthew’s Friday Pieday: Pizza Valdostana is a variety of Italian pizza…a Neopolitan style crust topped with tomato sauce, grated Parmesan, fontina cheese, prosciutto, baby bella mushrooms, fresh mozzarella and fresh basil.

Unfortunately, Matthew’s Sunday Pizza Creation was postponed due to a 6-hour power outage. He was right in the middle of making dough when the power went out. So he is planning to make it on Tuesday.
