This was a short week in the kitchen for me as I had a polyethylene exchange of the left knee on Thursday. I had a total knee replacement in 2009. Unfortunately, the plastic parts wore out. I am thankful for a successful surgery. After a few weeks of physical therapy, I hope to be getting around much better.
My burning question though is this…it’s estimated to take 500-700 years for a plastic water bottle to begin to degrade, so why did the plastic in my knee only last 13 years!?!
Before going to the hospital, Matthew and I planned an early Father’s Day celebration for Roy on Tuesday. We made a variation of his favorite pizza, a Hawaiian Detroit-style Pizza with topped with ham, pineapple and Banana Peppers…
I came home from the hospital on Friday. Matthew and Roy are taking over in the kitchen for a while. Here is their first pizza creation…
Friday Pieday: A Meat Lovers Pizza…pan crust stretched thin topped with green tomato pizza sauce, grated Parmesan, mozzarella, Italian Dry Salame, Peppered Salame, Calabrese Salame, pepperoni, black olives, red onion and mozzarella.
Matthew Johnson was gone on Saturday , so Roy was on his own in the kitchen. He did a great job cooking a pork tenderloin in the crockpot (first time ever) and roasting the asparagus. An A+ for presentation!
Matthew’s Sunday Creation: Chimichurri Chicken Pizza…pan crust stretched thin topped with Chimichurri Pizza Sauce + Ranch dressing, Parmesan, mozzarella, crispy chicken strips, red onion and mozzarella.
Also Sunday was Father’s Day in the US. This is a picture from the last time these three were together on Father’s Day…
