Peggy's Pizza: Part 7 of 2023

We started out the week on Monday with Matthew cooking at home with his SCL staff. He experimented with his chili and then delivered dinner to us. Delicious!

In between time in the kitchen this week, I have been working on some quilting projects. In 1968, when I was 12, my maternal grandmother, Grandma Lessie, died. She was an avid quilter and left a pile of unfinished quilt pieces. Since no one else wanted the quilt pieces, I took them. So, 55 years later, I am finally doing something with them.

I did divide some up and sent them to my niece and nephews. I am now working on some table runners for Matthew and Bethany. Next week I will share what some other pieces were made into. As I look at Grandma Lessie’s lovingly stitched pieces, it brings back wonderful memories. I also think I am doing a great job hand-stitching the pieces together.

On Tuesday we got dinner in the crockpot early and then just had to finish up the sides.

Tuesday in the Kitchen with MatthewCrockpot Beef tips & mushrooms with gravy served over mashed potatoes and green beans.

Wednesday in the Kitchen with Matthew: Leftover homemade meatballs & sauce from the freezer turned into Meatball Subs and served with salad.

Friday (Thursday) Pieday: Styles & Variations of Pizza in Italy…another style popular in Rome is a street food sold ‘by the cut’…Pizza al Taglio Romano. A large rectangular pizza that is light and airy, yet crispy on the bottom; it is layered with sauce, mozzarella and then four different topping zones of your choice. Ours are: 1) Pepperoni, banana peppers, red onion and asiago, 2) Marinated artichoke hearts, wilted spinach and Ricotta & Parmesan, 3) Salami, green olives, Monterey Jack and hot honey, 4) Black olives, sun dried tomatoes and goat cheese. (Cut with scissors, to be authentic.)

And, by the way, Happy National Pizza Day!

On Friday: Matthew, 300 Kings & Queens and 700+ volunteers had an amazing time at The Tim Tebow Foundation Night to Shine Prom. Thank you to the Tim Tebow Foundation and Hand in Hand Ministry at Valley Church in West Des Moines for all they do!

And of course, Sunday was an event that has almost become a national holiday…

Sunday’s Creation: 7 Layer Dip, a favorite at Super Bowl parties, morphed into a Pizza…pan crust stretched thin topped with a blend of refried beans & ground beef, Monterey jack cheese, then garnished with a blend of salsa & guacamole, shredded lettuce, Mexican cheese, black olives, diced tomatoes, green onions, a swirl of sour cream and a sprinkle of cilantro.
