Peggy's Pizza: Part 6 of 2023

Well the week started out slow, as I was quarantined for 48 hours with an eye infection. By Thursday we were ready to cook again.

When I was growing up, my Mom’s cornbread dressing was one of my favorites at Thanksgiving. Or, any other time for that matter. Unfortunately, I lost my Mom when I was 19 and her dressing was one of many things I never learned to make.

When I first tried Stove Top Cornbread Stuffing I was surprised that it tasted almost like my Mom’s dressing. Especially if I add in celery and onions. We have also tried different recipes on the Stove Top box and they have always been good. So when I saw Stove Top Stuffing waffles, I knew we had to try them.

We heated up the waffle iron and tested it out…

Thursday in the Kitchen with Matthew: Stuffing waffles, crispy chicken strips, homemade chicken gravy and green beans.

Fortunately, I still had chicken drippings in the freezer from roasting four whole chickens in the crockpot last summer. The waffles were delicious.

On Fridays I am going to be exploring the styles and variations of pizza in Italy. If you are one of those that thinks ‘Pizza is Pizza’, you may be surprised to learn that I have discovered 61 different styles and variations.

Friday Pieday: Styles & Variations of Pizza in Italy…one of four styles popular in Rome is Pizza Tonda Romana…a cracker thin, crispy crust topped with plain tomato sauce, a sprinkle of salt, fresh Mozzarella, Pecorino Toscano cheese, prosciutto, black olives, Italian herbs and a drizzle of olive oil.

If you are like me and love a cracker thin, crispy crust then this is the one!

On Saturday we had no time in the kitchen as Matthew competed in Special Olympics District Basketball. Congratulations are in order to his 1st place team…Link Magic! They will be going to State on March 10-11, 2023.

On Sunday I tried a recipe that used a pound of pizza dough in an 8” cake pan. (In case you didn’t know, most pizza crust recipes make about a pound of dough.) It created a very thick crust that was great for dipping in the sauce.

Sunday’s Creation: Drunken Chicken Deep Dish Pizza…a Chicago style pizza topped with vodka sauce, sliced Mozzarella, grilled chicken, fresh parmesan, fresh basil and a grind of salt.
