Pandemic Pizza: Part 43 of 2022

This past week was Thanksgiving in the US! It has always been my favorite holiday for several reasons. I love the memories of a houseful of family and friends giving thanks. 

The other reason it’s my favorite is the food. Although, I will confess, the turkey itself is not my most favorite. For me the sides are the star…cornbread dressing (stuffing), mashed potatoes, gravy, sweet potatoes, homemade cranberry sauce (never from the can!), corn pudding, my Mom’s Waldorf salad, pumpkin pie and the controversial green bean casserole. 

Our Thanksgiving has been different the last couple of years. After our daughter moved to the UK and then with the pandemic, we have spent quiet Thanksgivings at home. Consequently, I don’t make all of my favorites for just one day anymore. 

So, this year I decided to spread out some of the flavors and favorites over several days by trying some Thanksgiving inspired recipes. 

I started last week with a Turkey White Bean Pumpkin Chili and a Pumpkin & Sausage Pizza.

On Tuesday we fused together our love of pumpkin and Mexican food…

Tuesday in the Kitchen with Matthew: Pumpkin & Black Bean Quesadillas

Wednesday, we finished prepping for the big day on Thursday. Although it was so much easier than in years past. I don’t know why it took me almost 50 years to figure this out. Several weeks ago, Matthew and I spent a few days making dressing (stuffing), sweet potatoes, green bean casserole, cranberry sauce, pie crust and pumpkin pie filling. We froze it all and it turned out perfectly.

Now what to do with all of the leftovers…

Friday Pieday: Thanksgiving (leftovers) Stromboli… pan crust topped with sweet potatoes, dressing (stuffing), turkey, cranberry sauce and feta cheese then rolled up and garnished with turkey gravy and fresh rosemary.

Saturday in the Kitchen with Matthew: Thanksgiving (leftovers) Poutine…sweet potato fries, dressing (stuffing), turkey, cheese curds, gravy and cranberry sauce.

Sundays Creation: Cranberry Turkey Pizza…pan crust topped with a sauce of homemade cranberry sauce & Dijon mustard, Parmesan, Monterey Jack cheese, (leftover) turkey, walnuts, red onion and Brie cheese then garnished with fresh rosemary.

I have a few more leftovers to use up. Stay tuned!
