Pandemic Pizza: Part 41 of 2022

This has been a crazy week. I missed my partner in the kitchen. But, he deserved a vacation. He was with Link Leisure Services Travel Club…

As you know, I’ve been battling a toe infection. It has been complicated by Long CoVid Hyperglycemia. Unfortunately, I lost the battle this week. I had surgery on Thursday to remove my pinky toe. I ask for your prayers, good thoughts, good energy and/or good vibes you have to send right now! Not only for physical healing, but for emotional healing as well. It has been difficult.

With some planning ahead, I did make pizza for my hubby and myself on Friday. On Wednesday, I prepared the dough and sauce and cooked the Italian sausage.

Friday Pieday: Mini-Chicago Deep Dish Pizzas…topped with a slice of provolone cheese, mozzarella, Parmigiano-Reggiano, red bell peppers, Basil-Garlic Italian sausage and tomato pizza sauce. (The mini-deep dish pans are from Williams-Sonoma.)

Matthew got home from San Antonio late Saturday night, but he got up to make the dough on Sunday morning.

Sunday’s Creation: Frisco Burger Pizza…Pan crust topped with Frisco sauce, Parmesan, Swiss cheese, seasoned ground beef, crumbled bacon, red onion and mozzarella then garnished with sliced tomatoes, shredded lettuce and dill pickles.
