Compared to last week, it has been slow in the kitchen. I am officially still on bed rest for the infection in my toe. So, I have tried to be more compliant this week.
Since we love tacos, why not make them a double! Matthew layered refried beans on a soft shell taco then wrapped it around a hard shell taco.
Wednesday in the Kitchen with Matthew: Double Decker Tacos with ground beef and green tomato salsa topped with cheddar, lettuce and taco sauce.
On Fridays, I am continuing to find regional styles & variations of pizza in the US. Buffalo (New York) is best known for wings, but they also have their own style of pizza.
Friday Pieday: Buffalo Style Pizza…a hybrid between thin and thick crust topped with a sweet tomato paste-based sauce, pepperoni and lots of mozzarella.
On Sunday we celebrated Beggars Night. Now you may ask, what is Beggars Night? The Des Moines metro has a unique tradition of trick or treating on October 30, rather than Halloween. This tradition began in 1938 and now other communities across the country do so as well.
Sunday’s Creation: A Ghostly Chicken Pizza…a pan crust topped with white garlic cream sauce, Parmesan, chicken and mozzarella.
