Pandemic Pizza: Part 37 of 2022

After a long Blog Post last week, I’m afraid this one is going to be a short one.

Matthew has been to busy this week for time in the kitchen. On Monday he and Dad went on an ATV day trip.

On Tuesdays, he has been practicing for Special Olympics District Bowling Competition which is coming up next week.

He also went to a Halloween Party on Wednesday evening at Link Leisure Services. (No pictures.)

On Saturday evening he was a Special Olympics Ambassador at a Tailgate Fundraising Event. As for me, I am on bed rest for an infection in a toe. So other than getting up briefly to make pizzas, I have been giving directions for simple meals to my hubby. I hope to be back in the kitchen soon.

Here are the pizzas for the week…

Friday Pieday: Copycat Ohio Valley Style Pizza (DiCarlo's Pizza in Steubenville, Ohio)…a thin focaccia style honey crust pre-baked in a sheet pan then topped with homemade sauce to finish baking. It is then topped with provolone and mozzarella, room-temperature pepperoni and room-temperature banana peppers.

Sunday’s Creation: Chili ‘Sundae’ Pizza…We love chili sundaes…Fritos topped with chili, cheddar cheese, sour cream and green onions. So, why not Matthew’s leftover chili on a pan crust with all of the toppings!
