This has been a busy week planning for a 23 day vacation. I have all the bills paid, stopped the mail, notified the police for vacation watch, set up a schedule for Matthew since he is staying home and arranged for the care of Miss Cali, our almost 14 year old senior kitty.
Also, we finished our packing on Friday evening. We will be in Canada and then Alaska. We had to plan very carefully for the variable weather without overpacking. So we will have lots of layers.
Matthew was pretty busy this past week as well. As a Special Olympics Global Messenger, he welcomed golfers to a fundraising golf tournament on Monday. He then putted out the hole for each group on the 2nd hole. One group he putted for a birdie.
On Friday he helped with a Special Olympics fundraiser, ‘Cop on Rooftop’ at Dunkin’ Donuts. He was there greeting customers from 5 am to noon.
Consequently, we were only in the kitchen one day. We are still trying different variations of poutine…
Thursday in the Kitchen with Matthew: Pizza Poutine…crispy waffle fries seasoned with pizza spices, melted mozzarella, sliced pepperoni, mushrooms, black olives, red onion, pizza gravy (sauce) and Parmesan.
On Friday we tried a new pizza method…Air Fryer Pizza. It was very time consuming, as you pre-fry the crust before putting on the toppings. The directions said after the pre-fry to put on the toppings and then you could freeze them.
The first one in the fryer the crust came out ‘very’ limp, more like a floppy tortilla. We gave up and finished them in the oven.
Friday Pieday: We divided our regular dough into eight pieces. They were then topped with homemade sauce, Italian sausage, pepperoni, mushrooms, mozzarella and pickled red onions.
We love breakfast, so Sunday’s pizza hit the spot…
Sunday’s Creation: Sunny Side Up Pizza…my pan crust topped with Dijon Mustard, gruyere cheese, Parmesan, thinly sliced deli ham, baby spinach, mozzarella, sunny side up eggs and freshly cracked pepper.
