As the hot lazy days of summer persist in the US, I feel for those of you in the UK who are experiencing an unprecedented heat wave. And, you don’t have air conditioning!
I don’t know about you, but the heat exhausts me. I don’t feel much like cooking or eating. But we did finally find our way into the kitchen on Thursday. We are continuing to make variations of poutine.
Thursday In the Kitchen with Matthew: Bacon Cheeseburger Poutine…lettuce, French fries, seasoned ground beef, homemade cheese (sauce) gravy, shredded cheddar, crumbled bacon, tomatoes, dill pickles and green onions.
On Fridays I’m continuing to explore styles and variations of pizza in the US. This week is a variation brought to South Philly by Italian immigrants in the early 20th century.
Friday Pieday: Philly Tomato Pie…a focaccia style dough topped with a spicy tomato gravy (sauce) and grated Pecorino-Romano cheese.
With this heat, my basil is growing like crazy. So, a summer meal with basil was in order. Also, did you know that you can buy day old bread at Jimmy John’s for 50 cents a loaf? I can’t make bread that cheap. I keep a loaf or two sliced up in the freezer for garlic toasts.
Saturday in the Kitchen with Matthew: A bumper crop of basil…Caprese skewers, Bruschetta, marinated olives, marinated fresh mozzarella, Sea Salt Caramels and cranberry mules with fresh mint from the garden.
Sunday’s Creation: Chicken Fajita Pizza…my thin crust topped with Chimichurri pizza sauce, cotija cheese, chicken, green & red peppers, onions, Monterey Jack cheese then garnished with guacamole, sour cream, cheddar cheese, jalapeños & tomatoes. Everything but the sizzle!
