This was a busy week of last minute preparations for Special Olympics USA Games. With planning to be gone for nine days, our meals were made up of using what we had in the refrigerator.
So when Roy brought in some asparagus from the dwindling bed, I looked in the fridge and pantry to see what we could come up with.
Wednesday in the Kitchen with Matthew: Angel Hair Pasta with Alfredo sauce, prosciutto, asparagus from the garden, shaved Parmesan and garlic bread.
Our neighbors will pick the last of the asparagus while we are gone.
Pizza this week was made from what I had in the fridge and pantry as well. I did take some shortcuts. I used sour cream instead of crème fraiche, I used the last of the precooked bacon bits and I used the last onion. It was delicious, if I do say so myself.
Thursday (Friday) Pieday: Flammkuchen (German Pizza)…a yeast-less flatbread type crust topped with crème fraiche, nutmeg, salt & pepper, caramelized onions, bacon and Gruyere cheese.
On Saturday Matthew had to be at the airport for a media send-off and a chartered flight by 8:30. Unfortunately, we had to be at the main terminal to check in at 9 am so we missed the send -off. But here is a pic and the article.
Sunday the opening ceremonies were from 9-noon. They were then broadcast on ESPN from noon-3 pm. Due to the heat and humidity we opted to stay in the hotel room. It was a beautiful ceremony celebrating the inclusiveness of over 5500 individuals with intellectual and developmental disabilities from the U.S. and the Caribbean. Here are a few pics…
