It has been a busy week getting Matthew ready to go to the Special Olympics USA Games 2022. He will be traveling with and staying in a hotel with his team. (No Moms allowed, Lol.)
I have been putting his initials on everything with a permanent marking pen because when staying in a hotel his suitcase looks like it exploded into the room. So at least he will be able to identify his belongings.

Taco Tuesday in the Kitchen with Matthew: leftover wings turned into Chicken Tacos topped with shredded lettuce, red onion, tomatoes, Mexican cheese, sour cream, fresh cilantro & taco sauce and a side of refried beans.
Breaking news…Taco Bell relaunched the Mexican Pizza this week! Unfortunately, it has been met with supply chain issues and may go away again. So we thought we would create a copycat…
Thursday in the Kitchen with Matthew: So here is our version…refried beans & meat between two crispy tortillas then topped with sauce, cheese, tomatoes and green onions.
Friday Pieday: My version of Maine Lobster & Asparagus Pizza…my pan crust topped with Alfredo sauce, smoked Gouda, grated Parmesan, lobster cakes, asparagus and mozzarella.
As you have figured out by now, I love pizza. And, I also love (all beef) hot dogs. Whether you’ve been to Chicago or not, you’ve probably heard of Chicago Deep Dish Pizza and Chicago Dogs. My former neighbor suggested combining the two. So here it is…
Sunday’s Creation: Chicago Dog Style Pizza…my pan crust topped with poppy seeds, yellow mustard, Parmesan cheese, grilled hot dogs, Chicago Style (neon green) sweet relish, mozzarella, then a ‘drag through the garden” with a garnish of white onion, dill pickles, sport peppers, tomatoes and celery salt.
