Pandemic Pizza: Part 19 of 2022

How many of you do spring cleaning? And, does that include your clothes closet?

We had finished the spring cleaning prior to Bethany’s visit, except for Matthew’s closet. So that was on the agenda this past week. I knew he needed some new clothes prior to going to the Special Olympics National Games in June. He will be competing in Bocce Ball.

I should have taken before and after pictures. Matthew borders on being a hoarder, which includes not throwing away any clothing that has holes, stains or no longer fits. And I don’t know if anyone else has this problem, but it seems that t-shirts propagate like rabbits.

It had been three years since we had sorted through everything in his closet. After a long 9-hour day we sent several bags to Goodwill and several bags to the dumpster. Don’t worry, after doing some shopping, he still has plenty to wear.

We finally found our way back into the kitchen…

Thursday In the Kitchen With Matthew: Happy Cinco de Mayo Pizza and a margarita…my pan crust topped with Jalapeño Artichoke Dip, bacon and mozzarella. (How do you cook your bacon…microwave or oven? Matthew did both.)

Last year I did a series of pizzas with fruit as toppings. This tends to be quite controversial, especially pineapple. But, I recently found out some new information about pineapple on pizza…

Friday Pieday: Love it or hate it…bet you didn’t know that in the 1960’s a Greek immigrant to Canada first put pineapple on pizza, naming it the Hawaiian after the brand of pineapple. Hawaiian Style Pizza…my pan crust topped with red sauce, Pepper Jack cheese, Parmesan, Canadian bacon, pineapple and mozzarella.

It seems that in the U.S. there is a day or month to celebrate about every food you can imagine. The month of May happens to have several… #NationalHamburgerMonth #NationLoadedPotatoMonth #NationalBeefMonth

So we celebrated three of them on Saturday…

Saturday in the Kitchen with Matthew: Cheeseburger Baked Potatoes topped with cheese, seasoned hamburger, dill pickles, lettuce, tomatoes, red onion, mayo and more cheese.

And Sunday happened to be Mother’s Day in the U.S., so I stayed out of the kitchen.
