Pandemic Pizza: Part 12 of 2022

This was an exciting week…National Pi Day, St. Patrick’s Day and the first day of Spring!

Spring is my second favorite season in Iowa. I love it as the earth starts to awaken. The days are starting to get longer, there are tiny buds on my lilac bush and the bulbs are pushing through the ground.

I have been anticipating seeing the 300+ bulbs that my hubby planted last fall. Unfortunately, some are missing! If you look closely you will see why. Whatever you may call them; a chipmunk, a ground squirrel, or (only in Des Moines, Iowa) a squinny, they can be a nuisance.

Monday, March 14 was National Pi (π) Day. The reason it is celebrated on that date is the number π (spelled out as "pi") is a mathematical constant, approximately equal to 3.14159. Those of us who are not math nerds use this day to celebrate with pie.

Monday Dutch Oven Cooking with Roy & Matthew: Meatloaf & baked potatoes in the Dutch oven and green beans for dinner. And we celebrated National Pi (π) Day with a Coconut Pie baked in the Dutch oven.

Moving on to the next big holiday this week…

Thursday in the Kitchen with Matthew: Happy St. Patrick’s Day ☘️ Celebrating our Irish heritage…Corned Beef & Cabbage with Horseradish Mustard Sauce, Soda Bread & Kerry Gold Irish Butter and Kerry Gold Irish Cheddar.

Friday Pieday: Mustard Detroit Style Pizza (inspired by NYC’s Lions Tigers & Squares)…Detroit style crust topped with spicy brown mustard, corned beef, sauerkraut, Havarti & Swiss cheese. Check out a review of the NY pizza here.

Sunday’s Creation: Leftover Corned Beef & Cabbage Pizza…a soda bread pizza crust topped with a horseradish mustard sauce, Swiss cheese, Parmesan, corned beef, cabbage, potatoes, carrots, mozzarella and garnished with a drizzle of horseradish mustard sauce.
