This is the time of year we start to have wild temperature swings. It was almost 60 degrees on Monday and by Wednesday we woke up to 0 with a -17 windchill. Thursday, we got 5” of snow and by Sunday we were back to 40 degrees.
When it is so cold there is nothing better than some hot soup, so…
Wednesday In the Kitchen with Matthew: Although it was National Banana Bread Day, we made Jalapeño Cheese Cornbread to go with White Chicken Chili (with extra garlic & jalapeños). Perfect for a cold winter day. And the best part is we had leftovers for the snowy day on Thursday!
On Friday I tried another deep-dish style pizza in a round cake pan. It looked great before going in the oven. But the edges collapsed around the pan. If I make this recipe again, I will put it in a deep-dish pie plate. The collapsed edges did not affect the taste, though!
Friday Pieday: Double Crust Stuffed Pizza in a cake pan…stuffed with Italian sausage, pepperoni, mozzarella & cheddar then topped with a second crust and homemade sauce.
It’s been a few weeks since we made homemade pasta. So, Saturday we got out the pasta maker and made macaroni.
Saturday In the Kitchen with Matthew: Three-Cheese Macaroni Bake… homemade macaroni with white cheddar, Parmesan and blue cheese. Perfect with a salad.
Mardi Gras season in New Orleans and a Muffuletta sandwich inspired…
Sunday’s Creation: Muffuletta Pizza…my pan crust topped with garlic olive oil + spices & seasonings, mozzarella + provolone, salami, ham, mortadella, mixed olives, sliced red onion, mozzarella and garnished with pepperoncini.
