Pandemic Pizza: Part 50

I hope you all had a Merry Christmas!

It was a very quiet day for us. We virtually attended church in Monmouth, Wales. Then we watched one of my favorite Christmas movies, White Christmas. Dinner was ham, corn pudding, sweet potatoes, Waldorf salad and cranberry cake.

Matthew received a Christmas present that we plan to use soon. It is a gourmet pasta maker attachment for the Kitchen Aid Mixer. It has six different discs. He wants to make spaghetti first, so stay tuned.

The week leading up to Christmas we were busy making candy and cookies. Matthew handed out treat bags to several of his friends and staff. We delivered cookies and candy to our new next-door neighbors and to our old neighbors.

On Thursday Matthew and I tried out the new Paella pan.

In the Kitchen with Matthew: Paella with shrimp, chicken, Spanish Chorizo and Bomba rice…an hour of prep time and an hour of cooking! It was very good.

This is the next to the last ‘fruit’ pizzas…

Friday (Fruit) Pieday: Honey Almond (almonds are a fruit) Prosciutto Pizza…my pan crust topped with Ricotta cheese, goat cheese, prosciutto, toasted almonds, mozzarella and a drizzle of honey.

A few weeks ago, I used Chimichurri pizza sauce and had some left over. So, not wanting to waste it, I created another one…

Sunday’s Creation: Chimichurri Chicken Pizza…my pan crust topped with Chimichurri sauce, Monterrey Jack cheese, Parmesan, chicken, zucchini spirals, red onion and mozzarella.
