This has been a busy week as we decorated the house for Christmas. Although it is one of my favorite times of the year, I admit it has been hard to get in the mood as the weather has been unseasonably warm. I am looking forward to snow.
Matthew has been extra busy in the kitchen this week. He has a membership to a wonderful resource available for individuals with disabilities. It is a digital cooking magazine called LookCookandEat.
It was started by Sue Hoss, a professionally trained chef, who felt a calling to help individuals develop independent skills in the kitchen. Sue frequently invites members into the kitchen to do a Facebook Live cooking segment. Matthew joined her in the kitchen on Friday afternoon to make Chicken Tortilla Soup.

Thursday Doughday: Italian Sausage Artichoke Soup & Parmesan Garlic Bread with Blueberry Pineapple Crumble.
I only have a few more pizzas that I will be putting fruit on. I was a bit apprehensive about this week’s fruit…bananas. They are a popular pizza topping in Sweden. The pizza was surprisingly good. It even got Matthew’s sound of approval…mmMmm.
Friday (Fruit) Pieday: Banana Curry Pizza…my pan crust topped with pizza sauce, Farmers Cheese, Parmesan, pineapple, bananas, curry powder, smoked ham, peanuts, mozzarella and garnished with dried mint from Italy.
Matthew is a Packer’s Football fan. They haven’t been doing to so well this season. So, I created this pizza to cheer him up.
Sunday’s Creation: Bratwurst and Sauerkraut Pizza…my pan crust topped with crème fraîche & Bavarian mustard, Swiss cheese, Parmesan, sweet Bavarian sauerkraut, grilled brats, mozzarella and garnished with dill.
