We have had an unbelievably warm fall. That came to an end with the arrival of November. Monday, November 1st, we were enjoying the last of the summer flowers.
Twelve hours later (Tuesday morning) we woke up to a hard freeze.
The day before the freeze, my gardener (aka my hubby) planted 150 bulbs…tulips, daffodils, crocuses and iris. So as the garden goes into hibernation, we will be dreaming of spring flowers.
Between the colder weather and the time change this weekend, I want to go into hibernation as well. I find myself thinking of comfort food, such as soups, stews, casseroles and anything fresh from the oven. Maybe that’s why I keep coming up with more ideas for pizza that use some of my favorite comfort foods to top a crust. In the meantime here is some of what happened in the kitchen this week.
Thursday Doughday: Fall inspired Pumpkin pancakes with maple walnut syrup, scrambled eggs & sausage
Friday Lunch: I had a half a can of pumpkin leftover from the pancakes. So I whipped up a Pumpkin Shrimp Bisque and garlic bread for lunch.
Friday (Fruit) Pieday: One of my favorite salads inspired this Spinach, Mandarin Orange & Pancetta Pizza…my pan crust topped with whipped cream cheese & orange marmalade, Parmesan, baby spinach, mandarin oranges, pancetta, red onion, mozzarella and garnished with poppy seed dressing.
Sunday’s Creation: Roasted Rainbow Carrots & Pancetta Pizza…my pan crust topped with ricotta cheese & roasted garlic, grated asiago cheese, kale, roasted rainbow carrots, pancetta and shredded fontina cheese.
I wonder…What can I do next week with pumpkin, chestnuts and sweet potatoes!??
