Pandemic Pizza: Part 38

For a variety of reasons, October has always been my favorite month. Maybe because it is my birthday month, but there are many other reasons. It is a time of transition and preparation.

I love the smells of October…the air is crisp and fresh after the oppressive heat and humidity of the summer…the smell of burning leaves…a campfire (or a firepit on the deck)…

I love the feel of October… cooler days and sometimes cold nights (maybe the first flurry of snow)…sweaters and sweatshirts…the warmth of a fire inside…a sleeping kitty in front of the fire…

And the colors of October…orange pumpkins…red apples…the brilliant colors of the leaves…the dried corn in the field ready for harvest…

And the activities of October…football games…picking apples…pumpkin farms…corn mazes…fall parties with apple bobbing…haunted houses…trick or treating…picking our homegrown pumpkins and gourds…

And the tastes of October…hearty soups…warm bread fresh from the oven…pumpkin spice anything…s’mores…apple cider…which brings us to…

Thursday Doughday: Baked Apple Cider Donuts and Italian Sausage, Kale & Garbanzo Bean Soup. (Thanks to Nicole Smith for inspiring us to make donuts.)

Another reason to love October is my hubby’s birthday on the first, which brings us to…

Friday (Fruit) Pieday: Roy’s Birthday Coconut Shrimp Pizza…my pan crust topped with orange marmalade sauce, Parmesan, coconut shrimp, pineapple, red onion, fresh jalapeños from the garden, mozzarella and garnished with toasted coconut.

And more fall tastes and smells (glad I didn’t have to crack open the walnuts)…

Sunday’s Creation inspired by a breakfast casserole: Sausage, Apple & Walnut Pizza…a cornbread pan crust (a variation of my pan crust) sprinkled with dried sage, topped with Vermont maple syrup, sharp cheddar cheese, Parmesan, maple sausage, diced apples, walnuts, mozzarella and garnished with a drizzle of maple walnut syrup and fresh sage. (A big thank you to my soux chefs this morning… I’m moving slow due to a bruised rib.)
