Pandemic Pizza: Part 27

My family loves jalapeños…stuffed with cheese and wrapped in bacon, stuffed with cheese and wrapped in sausage (Armadillo Eggs), in soups, casseroles, eggs, cornbread, etc. And of course, Mexican food! Most people think jalapeños are hot, but if the seeds and ribs are removed they add great flavor to whatever you may be cooking or baking. One word of advice, if you are not used to handling jalapeños you might want to wear gloves. And, by all means avoid rubbing your eyes.

Our one jalapeño plant has been quite prolific thus far. And with the rain and heat the last week they are coming on fast and furious. So, I needed to find some new ways to use them. Although, I will freeze some whole to use in recipes during the winter.

So, here is what I came up with… ‘Extra’ Wednesday Doughday: Jalapeño Popper Corn Cupcakes…sweet & savory! Along with homemade lemonade & fresh brewed ice tea, we shared these with our new pastor on our front porch visit this afternoon…

Thursday Doughday: Jalapeño Poppers Stuffed Crust Pizza …cheese filled & bacon wrapped jalapeños stuffed into the edge of my pan crust topped with tomato sauce, Cotija, Parmesan, sopressata, pepperoni, Italian sausage, ham and mozzarella with an optional drizzle of hot sauce…

Friday (Fruit) Pieday: Lime Ricotta, Blackberries & Jalapeño Pizza…my pan crust topped with ricotta mixed with lime zest, Parmesan, prosciutto, blackberries, jalapeños, mozzarella and garnished with a drizzle of honey and a twist of lime…

Sunday’s Creation: Jalapeño Popper Pizza…my pan crust topped with homemade candied jalapeños, Cotija, crumbled bacon, diced jalapeños and mozzarella…

Next week…what can I do with cherries and corn?!?
