I was chatting on the phone with my mom last night and she told me that I should let you all in on a secret... our family recipe for corn pudding! I mentioned it in my previous Thanksgiving posts, and we realized that if you Googled 'corn pudding' you would find recipes for it that mostly include cornbread, and are quite different from our recipe!
So because I love you all (and my mom gave me permission) I am here to share our recipe! This has been handed down through my maternal grandmother's side of the family, and over the years has stayed pretty true to the original for the most part. My grandmother never made it in a crock-pot, but my mom figured out how to do that so it's super easy to make! You should be able to find all the ingredients you need at your local grocery store (even in Wales!) and it makes an easy side dish for any meal.
Without further ado, here is the recipe!
1 - 16oz can whole corn, drained
1 - 16oz can creamed corn
3 lightly beaten eggs
1/4 cup sugar
2 Tablespoons cornstarch
1 teaspoon minced onion (or onion powder)
3/4 teaspoon seasoned salt
1/2 teaspoon dry mustard
1/4 cup milk
1/4 cup melted butter
Throw it all in the crock-pot, stir, and heat on low for 4 hours.
Eat and enjoy!
