This past week was pretty good! My birthday was on Monday, and normally I would use that an excuse to eat whatever I want for at least a week. This time I indulged a bit on Monday (including a Belgian chocolate cake from the co-op) but I didn't go crazy! That's a win in my book.
We didn't hit the goal of daily yoga but we did do it twice, and we did miss it on the days we didn't do it. It's easy to let the couch and TV take over in the evenings, but we feel so much better when we do a practice before bed.
We did pretty well with vegetables this week - used up a bag of spinach the homeowners left behind, lots of tomatoes, and found creative ways to use the gigantic zucchini we got at the farm stand. I still have just enough left for scrambled eggs tomorrow morning and then I'll have used the whole thing! Yesterday I made a leek and potato soup with some leeks they left behind, and it is delicious. I'm enjoying the challenge of using up vegetables before they go bad - I still have some carrots to use this week, and something they call a "swede". I haven't figured out what it is in the US, I don't think I've ever had it before. Apparently you prepare it just like you would mashed potatoes! By the next time the farm stand is open we'll have used up all the veggies around the house so I'll get to purchase and plan for some of our own!
I need to do more walking for sure. As much as I dislike how regimented our lives were with a dog... turns out I need that discipline, lol. I gotta motivate myself to do it on my own!
I'm in a good place and plan to keep it going - here's to a good week ahead!
