Homemade Potato Chips!

The other day at the grocery store, potatoes were on my list.  Usually I buy the five pound bag of potatoes and that is plenty for just me and Joel.  This time however, they only had ten pound bags of potatoes.  I really had no idea what I would do with ten pounds of potatoes...but Joel said we should get them anyway and we would "figure it out".  

I used to have a really bad habit of buying fresh food and then letting it go bad, and I am trying to break myself of this habit.  So I was determined to figure out what to do with ten pounds of potatoes.  I asked over on Facebook, and received a lot of suggestions very quickly, all of which helped remind me that I had a gadget in my kitchen that I had never used.

We purchased this in 2013 with gift cards we received as wedding presents.  It moved with us from Ames to our Fort Dodge rental to our Fort Dodge house.  Today was the first day I pulled it out to use.  Yes, I realize it's 2018.  And holy cow, do I regret waiting so long.  Here it is on Amazon.

It was super easy to use, I just washed the potatoes and cut them up - I am far too lazy to peel potatoes for any recipe.  I put them on the tray it comes with, threw it in the microwave for 3 minutes and voila - I had perfectly crispy and delicious potato chips!  I may or may not have eaten two whole potatoes this way...

I cannot believe I have had the ability to make delicious homemade potato chips at my finger tips for almost five years, and I never did it until today.  What was I thinking?  

And now I can't help but wonder, what else am I missing out on?  What else am I procrastinating on that is denying myself something amazing?  Gah, so many things to think about! 

Anyway, if you love potato chips but want a healthier way to consume them than the stuff that comes in a bag, this is what you need!
